The yolk is one of the richest dietary sources of choline, a substance derived from an amino acid called serine (which is part of the B complex and is associated with feelings of well-being and happiness).
The choline in eggs is also linked to improved neurological function and reduced inflammation, and there's also evidence that this nutrient is excellent for pregnant women, as it contributes to fetal brain development. Egg yolks also contain two carotenoids, lutein and zeaxanthin, which protect vision.
These are the main nutrients that we can extract from egg yolk:
Vitamins: they contain vitamins A, E, D, B9 (folic acid), B12, B6, B2 and B1. As for vitamin D, it is worth noting that it is one of the foods in which it is found in the highest proportion.
Minerals: egg yolk contains iron, potassium, phosphorus and magnesium.
Proteins: It provides a very high amount of protein, making it a phenomenal food when it comes to gaining muscle mass.
Provides lots of healthy fats: more than 60% of them are unsaturated, that is, the good kind of fats.
Provides very little cholesterol.
It is an element very rich in lecithin: This substance is responsible for fusing with cholesterol to prevent it from being completely absorbed by the body.
Contains lutein and zeaxanthin: these are two substances that protect us, which can cause, for example, heart disease and thickening of the walls of blood vessels.
