Creamy Mushroom Pasta – A Comforting and Nutritious Meal

There are dishes that warm the soul — and this creamy mushroom pasta is exactly that. Comforting, full of flavor, and made with simple ingredients, it's a perfect option for a nutritious weeknight dinner. The pure coconut milk gives it a smooth creaminess, the mushrooms bring depth, and the spinach and cherry tomatoes add freshness and color.

A practical recipe with excellent nutritional value, rich in fiber, minerals, and healthy fats. Ideal for those looking for quick, tasty, and balanced meals.

Ingredients:

  • 1 onion
  • 1 clove of garlic
  • 200 g of brown mushrooms
  • 100g of shiitake mushrooms (or other mushrooms of your choice)
  • 200 g of dough
  • 400 ml of pure coconut milk
  • 300 ml of water
  • 2 tablespoons of nutritional yeast
  • 1 tablespoon of soy sauce
  • 1 teaspoon of salt
  • 1 cup of cherry tomatoes
  • 1 cup of spinach
  • Lime or lemon, for serving
  • Olive oil as needed.

Preparation method:

1️⃣ Finely chop the onion and garlic.

2️⃣ Heat a drizzle of olive oil in a saucepan and sauté the onion and garlic for about 5 minutes.

3️⃣ Combine the sliced mushrooms, coconut milk, water, nutritional yeast, soy sauce, salt, and noodles. Cook over medium heat for about 15 minutes, stirring occasionally to prevent the noodles from sticking to the bottom. Add a little more water if necessary.

4️⃣ Cut the cherry tomatoes in half and chop the spinach.

5️⃣ Add the tomatoes and spinach to the pasta, mix well, and cook for another 2 to 3 minutes.

6️⃣ Serve with a squeeze of lime or lemon juice for a fresh and aromatic touch.

Extra tip: If you want to further increase the nutritional value, add cooked chickpeas or tofu cubes. You can also vary the mushrooms and use portobello, oyster, or whatever is in season.
