Collected daily, in a traditional way, during the summer months, fleur de sel is composed of crystals formed by\u00a0<\/span>surface<\/span>\u00a0from the butcher's shop (salina). Naturally white and moist, it is the essence of the best salt. It is best seasoned after cooking.<\/span><\/p>\n<\/div>\n

One of the most sea-loving features of this mountainous region is the ease with which rainwater penetrates through the rock faults.\u00a0<\/span>calearia<\/span>, thus preventing the presence\u00a0<\/span>visible from<\/span>\u00a0watercourses that hide, becoming underground. Some of these watercourses become salty as they pass through the rock salt deposit.<\/span><\/p>\n<\/div>\n

This deposit occupies approximately the area of Portuguese Estremadura, between Leiria and Torres Vedras, and was formed over millions of years.<\/span><\/p>\n<\/div>\n

\n

To the Rio Maior Salt Mines<\/strong> are the result of a whim of Nature. A salt mine from a saline spring,\u00a0<\/span>extensive<\/span>\u00a0and deep, crossed by an underground current, feeds a well from which water seven times saltier than that of the Atlantic Ocean is extracted. The oldest document that\u00a0<\/span>know<\/span>\u00a0dates back to 1177, but it is thought that the use of rock salt dates back to prehistoric times.<\/span><\/p>\n
