Rich in nutrients, full of color, and with an irresistible aroma, it&#039;s the perfect recipe for those looking for a lighter and more balanced alternative without losing the comforting aspect.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ideal for making the most of seasonal vegetables, adding variety to meals during the week, or surprising the family with a nutritious and flavorful main course.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Ingredients:<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250 g of green lasagna sheets<\/li>\n\n\n\n<li>3 cloves of minced garlic<\/li>\n\n\n\n<li>1 eggplant, cut into cubes<\/li>\n\n\n\n<li>1 chopped onion<\/li>\n\n\n\n<li>1 zucchini, cut into cubes<\/li>\n\n\n\n<li>3 peeled tomatoes, diced<\/li>\n\n\n\n<li>2 large grated carrots<\/li>\n\n\n\n<li>1 small red bell pepper, diced<\/li>\n\n\n\n<li>300g of mushrooms, cut into pieces<\/li>\n\n\n\n<li>4 tablespoons of tomato pulp<\/li>\n\n\n\n<li>125 ml of olive oil<\/li>\n\n\n\n<li>700 ml of b\u00e9chamel sauce<\/li>\n\n\n\n<li>300g of grated mozzarella cheese<\/li>\n\n\n\n<li>1 teaspoon of oregano<\/li>\n\n\n\n<li>Salt to taste.<\/li>\n\n\n\n<li>Pepper to taste.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Preparation method:<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">1\ufe0f\u20e3 In a saucepan, heat the olive oil and saut\u00e9 the onion and garlic for a few minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2\ufe0f\u20e3 Add the eggplant, tomato, bell pepper, zucchini, mushrooms, and grated carrot.
