Wild rice provides fiber and a rustic touch; tomatoes and radishes add crunch and freshness, while feta cheese offers that salty and creamy flavor that harmonizes everything. Finished with an aromatic mustard and raspberry vinegar dressing, this salad is ideal for lighter days, packed lunches, or quick meals during the week.

Ingredients:

  • 100g of wild rice
  • 100 g of cherry tomatoes
  • 200g of feta cheese
  • 5 radishes
  • 1 red onion
  • 70 g of arugula
  • 50 g of black olives
  • 1 tablespoon of whole grain mustard
  • 50 ml of olive oil
  • 1 tablespoon of raspberry vinegar
  • Salt and black pepper to taste.

Preparation method:

1️⃣ Cook the rice in plenty of water with a pinch of salt. When cooked, drain and let cool.

2️⃣ In a large bowl, combine the cooled rice, halved cherry tomatoes, sliced radishes, half-moon red onion, olives, and arugula. Cut the feta cheese into cubes and add it to the salad.

3️⃣ Prepare the sauce: mix the olive oil, raspberry vinegar, mustard, salt, and pepper. Whisk well until smooth.

4️⃣ Toss the dressing into the salad and gently mix until all ingredients are well combined.

Extra tip: Add sesame seeds, chopped walnuts, or a drizzle of honey to the dressing for a special touch. You can also substitute lemon vinegar for raspberry vinegar for a fresher version.
