Description
Mache is a genus of plant in the family Valerianaceae and is a one-year plant.
Mache was considered a weed because it was originally found in winter cereals. Today, mache is cultivated as a tasty vegetable.
Because mache leaves have a strong (nutty) flavor of their own, there's no need to add much seasoning to cold, warm, or hot dishes paired with mache. These thin, leafy vegetables haven't been available for a long time, and they seem to be becoming increasingly popular.
