Oatmeal and Apple Pancakes – A Healthy, Comforting, and Energizing Breakfast
When the morning calls for something nutritious, comforting, and naturally sweet, these oatmeal and apple pancakes are the perfect choice. Made with simple ingredients, rich in fiber, and with the irresistible aroma of apple and cinnamon, they make any start to the day lighter and tastier.
Grated apple provides natural moisture and sweetness, while oats ensure satiety and lasting energy. Ideal for families, for those who work out, or simply for those who enjoy balanced breakfasts prepared at a leisurely pace.
Ingredients:
- 150 g of oat flour
- 2 apples
- 250 ml of plant-based milk (preferably oat milk)
- 30 g of coconut sugar
- 1 teaspoon of ground cinnamon
- 1 teaspoon of baking powder
Toppings (optional):
- 1 apple, sliced
- Maple syrup
- Chopped almonds
Preparation method:
1️⃣ Wash the apples well and remove the cores. Grate one of them and cut the other into small slices.
2️⃣ In a bowl, combine the oat flour, coconut sugar, cinnamon, baking powder, plant-based milk, and grated apple. Mix everything until you obtain a smooth dough.
Notice: The dough should be thick enough to form a disc without being excessively runny. If left to rest for too long, it may need to be adjusted with more plant-based milk.
3️⃣ Heat a non-stick frying pan over medium heat and, if you prefer, add a little coconut oil to prevent sticking.
4️⃣ Lower the heat slightly and place portions of batter using a spoon, measuring cup, or ice cream scoop. Add the apple pieces on top. Cover the pan to cook evenly.
5️⃣ When the edges are dry and loose, flip the pancake with a spatula and cook for another 1 to 2 minutes.
6️⃣ Repeat until you have used up all the dough.
7️⃣ Serve with your favorite toppings: fresh apple, chopped almonds, maple syrup, or natural yogurt.
✨ Extra tip: For an even more comforting version, add ground ginger to the dough or serve with a little homemade sugar-free jam.
