Green Beans with Bacon – A Traditional, Simple, and Flavorful Side Dish

Green beans are one of the most versatile vegetables in Portuguese cuisine — light, nutritious, and perfect to accompany meat or fish dishes. In this version, they gain even more flavor thanks to the classic combination of bacon and red onion, which creates an aromatic, rich, and irresistible stir-fry.

It's a quick, practical recipe full of texture. The green beans stay crunchy, the bacon adds intensity, and the final touch of balsamic vinegar elevates the whole dish. A delicious way to showcase the fresh vegetables in your baskets.

Ingredients:

  • 500 g of green beans
  • 100g of bacon
  • 1 red onion
  • 4 tablespoons of olive oil
  • 3 tablespoons of balsamic vinegar
  • Salt and pepper to taste.

Preparation method:

1️⃣ Prepare the green beans, cut them in half lengthwise, wash them, and cook them in salted water for about 10 minutes. Drain and set aside in a deep bowl.

2️⃣ Cut the red onion into thin half-moons and the bacon into small strips.

3️⃣ Heat the olive oil in a frying pan, add the onion and bacon, and cook until the onion is soft.

4️⃣ Season with salt and pepper, add the balsamic vinegar and let it simmer for a few seconds.

5️⃣ Pour this mixture over the green beans and mix well. Serve hot.

Extra tip: Finish with chopped parsley or chives for a fresh touch. If you want a lighter version, replace the bacon with sautéed mushrooms.
