Vegetarian Lasagna – Comfort, Color, and Flavor in Every Layer
A good lasagna has the power to transform an ordinary meal into a special moment — and this vegetarian version does just that with the help of fresh vegetables, a creamy texture, and the comforting flavor of the oven. Rich in nutrients, full of color, and with an irresistible aroma, it's the perfect recipe for those looking for a lighter and more balanced alternative without losing the comforting aspect.
Ideal for making the most of seasonal vegetables, adding variety to meals during the week, or surprising the family with a nutritious and flavorful main course.
Ingredients:
- 250 g of green lasagna sheets
- 3 cloves of minced garlic
- 1 eggplant, cut into cubes
- 1 chopped onion
- 1 zucchini, cut into cubes
- 3 peeled tomatoes, diced
- 2 large grated carrots
- 1 small red bell pepper, diced
- 300g of mushrooms, cut into pieces
- 4 tablespoons of tomato pulp
- 125 ml of olive oil
- 700 ml of béchamel sauce
- 300g of grated mozzarella cheese
- 1 teaspoon of oregano
- Salt to taste.
- Pepper to taste.
Preparation method:
1️⃣ In a saucepan, heat the olive oil and sauté the onion and garlic for a few minutes.
2️⃣ Add the eggplant, tomato, bell pepper, zucchini, mushrooms, and grated carrot. Season with salt and pepper, stir, and let it cook for about 10 minutes.
3️⃣ Add the tomato pulp and oregano. Mix well and add a ladle of béchamel sauce. Stir again and bring to a boil. Turn off the heat.
Notice: If your lasagna requires pre-cooking, follow the package instructions. The pre-cooking indicated in this recipe is not necessary.
4️⃣ In a baking dish, alternate layers of vegetables, a little béchamel sauce, some grated mozzarella, and lasagna sheets.
5️⃣ When you've finished with the vegetables, top with a layer of pasta, the remaining béchamel sauce, and the remaining mozzarella cheese.
6️⃣ Bake in a preheated oven at 160°C for about 1 hour, until golden brown and bubbly.
✨ Extra tip: For an even more special touch, add fresh basil leaves between the layers or combine sautéed spinach with the vegetables.
